Ingredients
1 (12 ounce) package egg noodles
1/4 cup chopped onion
2 cups shredded Cheddar cheese, divided
1 cup frozen green peas (or corn)
2 (6 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
1 cup bread crumbs

Directions
  1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  2. Preheat oven to 425 degrees F (220 degrees C).
  3. In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, and soup. Transfer to a 9x13 inch baking dish, and top with bread crumbs and remaining 1 cup cheese.
  4. Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

Ingredients
1/4 cup vegetable oil
1 cup minced onion
1/2 cup minced green pepper
1 jalapeno pepper, seeded and minced
pinch each of kosher salt and black pepper
2 tablespoons minced garlic
1 can (28 ounces) tomato sauce
2 cups ketchup (preferably Heinz)
1 cup water
3/4 cup Worchestershire sauce
1/2 cup cider vinegar
1/4 cup lemon juice
1/4 cup molasses
1/4 cup cayenne pepper sauce
1/4 cup spicy brown mustard
3/4 cup dark brown sugar, packed
1 tablespoon chili powder
2 teaspoons coarsely ground black pepper
1/2 teaspoon ground allspice
1 tablespoon liquid smoke (optional)

Directions
Pour the oil into a large saucepan and set over medium-high heat. Toss in the onions, green peppers, and jalapenos and give them a stir. Season with a pinch of salt and pepper and cook til soft and golden. Add the garlic and cook for 1 minute more. Dump in everything else except the liquid smoke. Bring to a boil, then lower the heat so the sauce simmers. Simmer for 10 minutes. Swirl in the liquid smoke and let the sauce cool. Pour it into a container, cover, and store in the fridge until ready to use.

Makes 6 to 7 cups

2 1/3 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1 1/2 cups white sugar
1/2 cup shortening
2 eggs
1 cup milk
1 teaspoon vanilla extract

Directions
For a Yellow Cake: Sift together flour, baking powder, salt, and sugar. Cut in shortening until fine crumbs are formed. Add eggs, milk, and vanilla. Beat at low speed for 1 minute, then high for 2 minutes, scraping the bowl frequently.

Pour batter into greased and floured 9x13 inch pan. Bake in preheated 350 degree F oven (175 degrees C) for 25 to 30 minutes.

Variation for a White Cake: Prepare as for the basic cake except use 3 egg whites for the 2 whole eggs. Whites may be beaten separately and added for a lighter cake.

Variation for a Chocolate Cake: Add 1/4 cup cocoa powder to the basic cake mix prior to adding the milk.

Variation for a Spice Cake: Add 1 teaspoon cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground allspice to the basic cake mix.

Variation for a Pineapple Upside Down Cake: Melt 1/2 cup butter in the bottom of a 9x13 pan. Add 2/3 cup brown sugar, stirring into the butter. Arrange pineapple slices in the pan. Top with the basic (yellow cake) mix recipe. Bake 30 to 35 minutes, cool 5 minutes, and invert to serve.
 
Ingredients
5 cups all-purpose flour
1 1/2 cups whole wheat flour
1 cup cornmeal
1/3 cup sugar
2 tablespoons plus 2 teaspoons baking powder
2 teaspoons salt

Directions
Measure the all-purpose flour, whole wheat flour, cornmeal, sugar, baking powder, and salt into the bowl of a large food processor. Process for 15 to 30 seconds or until thoroughly mixed. (Alternatively, stir the ingredients together in a bowl.) Spoon the mix into a 2-quart jar.

Stir 1 1/2 cups of pancake mix, 2 eggs, and 1 1/4 cups of milk in a mixing bowl until smooth. Melt 1 tablespoon of butter in a large frying pan over medium heat. Cook the pancakes for 2 to 3 minutes on each side. Enjoy with maple syrup. Serves 4.
 
Ingredients
2 1/2 - 3 lbs sweet potatoes (2 or 3 - 29oz. cans)
2 eggs
1/4 c. brown sugar
1/4 c. melted butter
1 tsp salt
1 tsp cinnamon
1 cup orange juice

Directions
Mash the sweet potatoes (drain if using canned). Beat in eggs, brown sugar, melted butter, salt and cinnamon. Beat in OJ until fluffy, you may not need all 1 cup of OJ. Put in a greased 2 qt baking dish.

Bake uncovered for 20 minutes at 350. Remove from oven and sprinkle the top with marshmallows. Watching closely, for 5-8 minutes bake until marshmallows are soft and slightly brown.

Serves 6-8.

1 1/2 cups warm water (not above 115 degrees)
1 Tbsp olive oil
3 Tbsp honey
2 1/4 cups whole wheat flour
1 1/2 cups white flour
1/3 cup gluten
2 tsp yeast
1/2 tsp salt

Directions
Add all ingredients to bowl in order listed. Mix well - approx. 5 minutes
Let rise in mixer at least 1 hour (cover bowl with towel)
Mix again for 1 minute
Transfer dough to greased bread pan (9x5)
Let rise 30 minutes (covered)
Bake at 350 for 28 minutes
 
 Ingredients
1 package active dry yeast (2 teaspoons)
1 cup warm water (105° to 115°, no more)
3 cups all-purpose or bread flour
1 tablespoon sugar
1 teaspoon salt
1 tablespoon extra-virgin olive oil, plus a little for coating

Directions
Dissolve the yeast in the warm water. Set aside.

By hand: In a large mixing bowl, combine the flour, sugar and salt. Make a well in the center of the dry ingredients and pour the olive oil and yeast mixture into it. Stir until it begins to form a ball, then turn it out onto a clean, floured surface and knead for about 4 or 5 minutes.

In a mixer: Using a dough hook, combine the flour, sugar and salt. Add the liquid ingredients and mix on low until the dough begins to clump around the dough hook. Remove and knead as above.

Lightly oil the mixing bowl, put dough in, and let rise for one hour. Punch dough down and knead a few minutes. Use a roller to flatten it for the pizzas.

Makes (2) 12" pizzas.

Can freeze dough.

4 med slices of soft bread, torn in pieces
1 1/2 cup milk
2 egg, beaten
1/2 minced onion
1/2 c chopped celery
2 1/2 tsp salt
1/2 tsp pepper
1/2 tsp dry mustard
1/2 tsp garlic salt
2 tbsp worchestershire sauce
6 tbsp catsup for the top of the loaf

Directions
Preheat oven to 350. Add all ingredients to bowl & mix thoroughly. Shape into two loaves in a 9x13 baking pan. Bake until done, approx. 1 1/2 hours.

1 ½ c. All-purpose flour
½ c. Sugar
2 tsp. Baking powder
¾ tsp. Salt
1 tsp. Ground cinnamon
½ tsp. Ground ginger
¼ tsp. Ground cloves
½ c. Raisins
1 Egg
½ c. Milk
½ c. Canned pumpkin
¼ c. Vegetable oil

Topping
2 ½ tsp. Sugar
½ tsp. Ground cinnamon

Directions
Stir flour, sugar, baking powder, salt, and spices in a large mixing bowl until well combined. Then mix in raisins. Beat egg, milk, pumpkin, and oil in a smaller bowl. Pour pumpkin mixture into flour and spices, stirring only until combined. Fill lightly greased muffin cups 2/3 full. Mix sugar and cinnamon; sprinkle on muffins. Bake in a preheated 400-degree F oven 20 to 25 minutes or until nicely browned. Serve warm.

½ c. Whole wheat flour
1 tsp. Baking soda
¼ tsp. Salt
½ c. Butter
¾ c. Brown sugar
2 Eggs, beaten
2 1/3 c. Bananas - mashed, overripe (approx. 4-5 medium)

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
