Super versatile drop biscuits that I love because they don't require unsalted butter or buttermilk. Easy!

Ingredients
2 cups Flour
1-½ Tablespoon Baking Powder
2 teaspoons Sugar
½ teaspoons Cream Of Tartar
1 teaspoon Salt
½ cups Butter, Softened
1 cup Milk

Directions
Preheat the oven to 450 degrees F.

Mix the flour, baking powder, sugar, cream of tartar, and salt. Add the softened butter and mix until it forms coarse crumbs. Add the milk and stir just until mixed. Place by spoonfuls (about 1/4 cup to make 15 biscuits) onto a parchment covered sheet pan. Bake until puffed and golden, about 15 minutes.

Variations
1-2 teaspoons of herbs (dill is my favorite), or
1 cup shredded cheese - 3/4 in the dough, 1/4 on top

Ingredients
Sponge
1/4 teaspoon sourdough starter
2 cups flour
1 cup warm water

Dough
3 cups flour
3/4 cup warm water
2 tablespoons sugar
1 1/2 teaspoons salt
1/2 teaspoon yeast
2/3 cup whole garlic cloves (you may prefer more or less to your taste)

Directions
The Sponge
  1. Combine the sponge ingredients in a large plastic bowl, cover with plastic wrap and keep in a warm place for 18-20 hours.
  2. When ready the sponge should have expanded and smell pleasantly sour and bubbling. (at this point you may wish to refrigerate for up to 7 days, just remember to bring back to room temp).
The Bread
  1. Place sponge and all other ingredients except garlic in mixing bowl, mix well and let rest 20-30 minutes.
  2. Mix again for 5-10 minutes, then cover and allow to rise 2-3 hours.
  3. Turn out onto lightly greased surface and flatten like you would cinnamon rolls .
  4. Sprinkle the garlic cloves evenly over the dough and roll up in cinnamon roll fashion pinching the sides in as you make a long oblong shaped loaf.
  5. Allow the loaf to rise covered with a towel for 2 hours or till almost doubled in size.
  6. Preheat oven to 475°F.
  7. Slash the top of the loaf 4 times with a sharp knife.
  8. Spritz loaf and oven with water.
  9. Bake in 475°F oven for 3 minutes spraying 2 more times.
  10. Turn the oven down to 375°F (if it is baking to fast try 350°F).
  11. Spray often with the water and watch for the bread turning brown too fast. If it does, cover with a foil tent.
  12. Bake approx 30-40 minutes or till nicely browned and bottom thumps hollow.
  13. This bread can be a little temperamental, just watch the coloring and adjust temp and cook time as needed.

Ingredients
1/3 cup oatmeal
3 Tbsp. cornmeal
1 1/2 cups boiling water
3 Tbsp. butter or vegetable oil
3 Tbsp. molasses
1 1/4 cup whole wheat flour
2 1/2 cups bread flour
1/3 cup dry milk
3 Tbsp. gluten
2 tsp. salt
2 tsp. dry yeast

Directions
Add oatmeal and cornmeal to heat-proof bowl. Pour in boiling water, stirring to prevent lumps.

Let the mixture cool for ten minutes. Stir, pour it into the bread pan, and add the rest of the ingredients in the order given.
 
Ingredients
1 1/2 cups warm water (not above 115 degrees)
1 Tbsp olive oil
3 Tbsp honey
2 1/4 cups whole wheat flour
1 1/2 cups white flour
1/3 cup gluten
2 tsp yeast
1/2 tsp salt

Directions
Add all ingredients to bowl in order listed. Mix well - approx. 5 minutes
Let rise in mixer at least 1 hour (cover bowl with towel)
Mix again for 1 minute
Transfer dough to greased bread pan (9x5)
Let rise 30 minutes (covered)
Bake at 350 for 28 minutes
 
 Ingredients
1 package active dry yeast (2 teaspoons)
1 cup warm water (105° to 115°, no more)
3 cups all-purpose or bread flour
1 tablespoon sugar
1 teaspoon salt
1 tablespoon extra-virgin olive oil, plus a little for coating

Directions
Dissolve the yeast in the warm water. Set aside.

By hand: In a large mixing bowl, combine the flour, sugar and salt. Make a well in the center of the dry ingredients and pour the olive oil and yeast mixture into it. Stir until it begins to form a ball, then turn it out onto a clean, floured surface and knead for about 4 or 5 minutes.

In a mixer: Using a dough hook, combine the flour, sugar and salt. Add the liquid ingredients and mix on low until the dough begins to clump around the dough hook. Remove and knead as above.

Lightly oil the mixing bowl, put dough in, and let rise for one hour. Punch dough down and knead a few minutes. Use a roller to flatten it for the pizzas.

Makes (2) 12" pizzas.
